Sparkling tea cocktails: Golden Hour, Twilight Spark and more

Golden Hour and Twilight Spark, two Purité sparkling tea cocktails in a coupe and a flute

Sparkling tea gives a bartender what a mixed drink needs: dryness, aroma, tannin and acidity, without the sugar that weighs a glass down. Golden Hour and Twilight Spark are the two signature serves created for our Hong Kong launch at dragon-i. One is built on gin, the other is entirely alcohol-free. Both are easy to recreate at home.

Golden Hour

Pale gold in a coupe, Golden Hour pairs the brightness of Purité Orchard with dry gin, elderflower and fresh mint. It is the serve for the first hour of the evening, when the light is low and the conversation has just started.

Golden Hour

Gin, elderflower, lime, mint, Purité Orchard

  • 40 ml dry gin
  • 15 ml elderflower cordial
  • 15 ml fresh lime juice
  • 6 mint leaves
  • 90 ml Purité Orchard, well chilled

Press the mint gently with the lime juice and cordial in a shaker. Add the gin and ice, shake briefly and strain into a chilled coupe. Top with Orchard, stir once and finish with a mint tip.

Twilight Spark

Deep red in a flute, Twilight Spark is the alcohol-free signature of the night. Ripe strawberries and pink grapefruit meet the fine mousse of Orchard, and the result drinks like a cocktail, not a compromise.

Twilight Spark

Strawberry, pink grapefruit, lemon, Purité Orchard

  • 3 ripe strawberries
  • 30 ml fresh pink grapefruit juice
  • 10 ml fresh lemon juice
  • 100 ml Purité Orchard, well chilled

Muddle the strawberries with both juices, shake with ice and fine-strain into a flute. Top with Orchard and garnish with a slice of strawberry. No syrup is needed; the fruit and the tea carry the sweetness.

Three rules for mixing with sparkling tea

Serve it cold, between six and eight degrees, and add the tea last so the mousse stays lively. Keep sugar to a minimum, because the tea is dry and the fruit does the work. And choose the style to suit the drink: Orchard for fruit-led serves, Vineyard wherever a dry sparkling wine would normally go. New to the category? Start with what sparkling tea is.

Mix with the gold-medal Orchard.
